Vegan post-workout BANANza meal!
This dinner is almost ALL fruits and veggies, and so fulling/tasty that I hadn’t even noticed!
The dinner is one baked sweet potato (which are easier to make than you think!), canned peas, and a stir-fry.
Sweet potato: 1. Pierce all over with a fork and then insert into microwave for approx. 2:45. TURN over and put in for another 2:45. Done!
Stir-fry: 1 tbsp oil lightly heated in a frying pan, 1/2 zucchini, 1/4 green pepper, 2 garlic cloves, 1/2 onion, 2-3 cups of spinach, 2 large mushrooms, and a few broccoli florets. Just fry in the pan to desired temperature and I had it unseasoned, but add garlic powder, salt & pepper, italian seasoning or wtv to your discretion!
Chunky Monkey Spinach Smoothie:
1 cup chocolate soy milk
1 whole banana
1-2 tbsp peanut butter
2 cups spinach
3/4 welch’s frozen strawberries and bananas mix
Throw in the blender and enjoy!!!
