Ultimate vegan veggie burgers!

I used president’s choice veggie burgers and regular white hamburger buns because my friend and I were trying to recreate a restaurant meal lol. For toppings, I used tomatoes, onion, pickles, spinach, and sautéed mushrooms. I used homemade pesto and ketchup on the bun :3 

On the side I had spicy sweet potato wedges. This meal was delish. 

Zucchini Noodles & Avocado Basil Sauce!
These zucchini noodles are SO easy to make and taste delicioso, I regret every bowl of pasta ever before finally making this recipe!
Just cut off either end of the zucchini and peel. Then, using a mandolin or just by hand, cut the zucchini julienne. Then, add some oil to a pan and fry until al dente. Done!! Then, add wtv sauce you want (though I recommend this avocado sauce or pesto!)

The pesto was phenom and creates a really nice umami taste. :)
(Served with french baguette and vegan margarine was to die for)

Vegan post-workout BANANza meal!
This dinner is almost ALL fruits and veggies, and so fulling/tasty that I hadn’t even noticed!
The dinner is one baked sweet potato (which are easier to make than you think!), canned peas, and a stir-fry.
Sweet potato: 1. Pierce all over with a fork and then insert into microwave for approx. 2:45. TURN over and put in for another 2:45. Done!
Stir-fry: 1 tbsp oil lightly heated in a frying pan, 1/2 zucchini, 1/4 green pepper, 2 garlic cloves, 1/2 onion, 2-3 cups of spinach, 2 large mushrooms, and a few broccoli florets. Just fry in the pan to desired temperature and I had it unseasoned, but add garlic powder, salt & pepper, italian seasoning or wtv to your discretion!
Chunky Monkey Spinach Smoothie:

1 cup chocolate soy milk1 whole banana1-2 tbsp peanut butter2 cups spinach3/4 welch’s frozen strawberries and bananas mix

Vegan white bean tacos!

I used an old el paso taco kit for the shells and the sauce, I also used the seasoning!

In a medium sized sauce pan, add a can of white beans, and smoosh some of them with a fork, leaving some whole. Then add a can of corn, and 3/4 cup of salsa. Heat until desired temperature. 
Keep stirring to ensure it doesn’t stick.
Then, add taco seasoning and mix. 
I shredded lettuce for the tacos as well,
and Daiya vegan cheese would be a nice touch too!

Vegan tofu nuggets!
This is my own recipe, and the yield is not to perfection yet, so take it with a grain of salt.
Ingredients:1/2 block firm tofu3/4 cup multigrain cheerios1/4 cup montreal steak spice2 tbsp lemon zest
Preheat the oven to 400 degrees celsiusCut the tofu into nugget like rectangles.Crush the cheerios in a bowl and add zest and spice, stir until blended. In a tupperware container, add the oil and tofu, closing with a lid, and turning in all directions to cover.Then, roll the oiled tofu strips in the breading until covered. Put the strips on a baking sheets (with aluminum foil) and put in oven for 15 minutes. :)

In a tupperware container, add the oil and tofu, closing with a lid, and turning in all directions to cover.
